INGREDIENTS
• 600 g of soaked cod
• 1 kg small potato for baking
• 8 cloves of garlic
• 1 small onion (optional)
• 100 ml of olive oil Azeite Extra Virgem Lagar do Parral
• Salt qb
Preparation Steps
Place the cod fillets on an oven tray
Place the sliced garlic and sprinkle with the Lagar do Parral Extra Virgin Olive Oil.
On a separate tray, place the potatoes with their skins on, sprinkled with a little coarse salt.
Place the trays in the oven at 200ºC for around 40 minutes for the potatoes, remove the cod after 20 minutes, while it is in the oven, baste the cod from time to time with the roast olive oil.
When the potatoes are roasted, crush them lightly with kitchen paper until the skin cracks.
Place the potatoes on the cod dish; if you wish, you can chip the cod.
