Seafood is one of the Portuguese specialties. How about a quick and very tasty recipe… Shrimp with Ginger, Coconut and Lemon Sauce!
INGREDIENTS
Shrimp:
• 1.5 kg of peeled large shrimp
• 50 ml of Lagar do Parral Extra Virgin Olive Oil
• Salt
• Ground pepper
Sauce:
• 100 ml of lemon juice
• 1/2 lemon, grate the peel
• 20 g of chopped ginger
• 200 ml coconut milk
• 50 ml of olive oil Azeite Extra Virgem Lagar do Parral
• Salt
• Ground pepper
• Chopped chives
Preparation Steps
Shrimp:
Season the shrimp with Lagar do Parral Extra Virgin Olive Oil , salt and pepper and grill over high heat.
Sauce:
Add the ginger to the Lagar do Parral Extra Virgin Olive Oil , add the lemon juice and coconut milk, reducing over low heat.
Season with salt and pepper, place in a blender and add the grated lemon peel.
Arrange the shrimp on a plate, add the sauce and add the chopped chives.
Accompany with toasted bread.
